Turkey Breast


2- turkey breasts
- olive oil, as needed
- herbs (ex: sage), as needed
- salt, as needed
- sugar, as needed
- butter, as needed

my sous-vide cooker
large pot
vacuum sealable bag
(or zipper lock bag)
about 8-24 hours 2 turkey breasts



Heat My Sous-Vide to 131°F/55°C

Presear the skin
Heat a pan with olive oil over medium-high heat until very hot
Add turkey breast and sear for 1-2 minutes until skin is golden brown

Season and bag
Combine 5 parts salt and 2 parts sugar in a bowl, stir
Season mixture over the turkey breast
Place seasoned breasts into bag and add olive oil and herbs, seal

Cook for 8 hours – up to 24 hours
Lower bag into the water
Clip bag onto side of pot
Cover the pot

Heat a pan on medium-high heat and add oil
Add butter and allow to melt
Add breast skin side down and baste with butter
Sear for 1-2 minutes, flip, and sear another 1-2 minutes while basting
