Duck Breast

2 - duck breast
- thyme, optional, as needed
- garlic, cloves, optional, as needed
- salt, as needed
- black pepper, as needed

my sous-vide cooker
large pot
vacuum sealable bag
(or zipper lock bag)
about 1.75 hours 2 large servings

 

RECIPE STEPS

Heat My Sous-Vide to 136°F/58°C

Score the skin
Sear the skin side for 2-3 minutes until a light golden brown
Add herbs like thyme and garlic to your desire
Flip and sear for another minute

Season and bag
Place breasts into the bag in a single layer
Include herbs as you desire and add salt and pepper for flavor

Cook for 105 minutes
Lower bag into the water
Clip bag onto side of pot

Finish
Heat a nonstick pot until very hot
Place the duck breast skin side down, sear until golden brown

Serve
