Burgers


 INGREDIENTS EQUIPMENT TIMING YIELD

900g - ground beef, 20% fat
50 - egg, about 1 large
- salt, as needed
- black pepper, as needed

my sous-vide cooker
large pot
vacuum sealable bag
(or zipper lock bag)
about 45 minutes 4 burgers

 

RECIPE STEPS

Heat My Sous-Vide to 133°F/56°C

Mix ground beef and egg
Combine ground beef and egg into a bowl, mix until fully
combined

Portion patties
Portion the beef mixture into 7 oz patties

Shape patties
Press the beef portions into the 4” ring mold

Season and bag
Season patties with salt and pepper
Place seasoned patties in the bag – use multiple if needed,
seal

Cook for 15 – 30 minutes
Lower bag into the water
Clip bag onto side of pot`

Remove and cool
Take the patties out of the bag to cool before searing

Finish
Place patties on a hot grill and sear for 45 seconds
Flip burgers and grill for another 30 seconds

Serve
